Have a table (person_style-view) of students (P_Unique_ID) and the courses (Course_Code) they have taken, and when they took it (Start_Date). I want to see ONLY students who have taken a course more than once. Is that enough information?

Do you want to calculate / present that all in Crystal or on the back end?
In crystal here is one way.
Create a formula field called "Count" as... (NOTE: guessing here as I do not know your field data types)...
totext({table.p_unique_ID},0,'') + "-" + {Table.Course_Code}
group on that formula field.
Create a Summary of that field as a COUNT location group footer.
Supress all details.
Supress all GFs
Condtionally supress GH as
