How can I count the number of responses for each choice in a multi-select field?  I want the number of A's, B's, C's, etc.

I would think shared arrays. 1 to hold the value that is being counted and 1 to hold the actual count.  Then use a formula to display the results

ps, a set of running totals would also work, if you know the values that you are looking for ahead of time.

you could try to create crosstab and put your
{multi-select field} into Rows and {multi-select field} into Summarized Fields.

i always forget about cross-tabs,and that you can do them in a group footer very nicely.
 
it would probably be a simpler solution than the shared arrays method.
