Have report that enters an x in a formula field
Would like to be able to count all the fields that contain an x
How do you count formula fields?

make the formula put a 1 instead and sum it.
you can alsomake a seoerate one with the X and use that for display
or
you can use a conditional display formula on the one that returns a 1

I'm guessing I'll have to say in formula that x =1  and then sum
cuz it needs to show the x on the report not a 1

you can do that using a Running Total or 3 shared variable formulas, I was suggesting a simpler approach.
I understand it needs to show an X, that is why I suggested to use a display formula on it (then 1 or 0 options) or just create 2 formulas, one for display and one for a sum.
