I have a number field (e.g. 10.00) in a CR XI that contains some NULL values. Is there a way to show the NULL values as 0.00 without converting it to text?

You might try using the report options to "convert database NULL values to Default".
You can also write a formula to do this without converting to text
if isnull(numberfield) then 0 else numberfield
